Lunch Series: Cauliflower rice bowl with veggies

Life gets easier when you can make food in few minutes and only with few ingredients . I've been loving all the buzz around cauliflower. There are so many options first a cauliflower rice then a pizza crust, I'm sure pudding or chocolate mousse desserts would come next. Let’s not forget the smoothies made with frozen cauliflower. 

Below is a recipe for making a cauliflower rice. If you ever find yourself hungry, you can whip this up quickly and make your lunch or dinner in 10-15 minutes. Cauliflower rice can be used raw, tossed like grains into a salad or in a cold side dish and it's super healthy and nutritious.

You can make the cauliflower rice bowl both vegan and non-vegan style. If you are a vegan, then here is the recipe and if you are a non-vegan then feel free to add any sort of protein you like: chicken or beef.

Ingredients (serves 2):

~ 1 pack of cauliflower rice

~ 2 cups of kale

~ ½ cup of purple basil

~ 1 avocado

~ 16 baby carrots

~ 8 cherry tomatoes

Optional

~ 4 teaspoons of hempseed

~ A pinch of turmeric

Sauce:

~ 2-3 tablespoons of olive oil

~ 1 tablespoon of balsamic vinegar (optional)

~ A pinch of salt

~ A pinch of pepper

~ 1 fresh lemon or 2 tablespoons of lemon juice

Prep Time: 15 minutes

Method:

1. Boil some water (1-1/2 cups)

2. Place the rice and add the water in the saucepan and bring it to boil, the water should cover up the rice so either use a cup or a cup and a half of water

3. When the water comes to a boil (when you see bubbles) reduce it to a simmer, cover and cook until all water is absorbed for 8-10 minutes, stir it few times

*You can also sauté the rice in a large skillet over medium heat in 1 tablespoon of olive oil. I prefer adding the olive oil after and boiling it in water

4. Meanwhile chop the carrots and tomatoes + kale and purple basil

5. Cut or slice the avocado in half

6. When the rice is done, it'll be kind of soft

7. Add the cauliflower rice to the bowls (half & half)

8. Add all the veggies (carrots, tomatoes) + kale & basil

9.  Add the avocado for an extra taste and good fat

10.  Sprinkle the hemp seeds

11.  Squeeze the fresh lemon + add salt & pepper + add olive oil + balsmaic vinegar

Voila! Ready, Set, Eat.
