Dessert Series: Chocolate Cupcakes

Anything with chocolate is delicious. This recipe is my mum’s recipe, so it is our traditional family cake, the one that my sister and I had fights over and ended up in cake dough and chocolate all over all faces. The following recipe is for 7 cupcakes or a horizontal shape cake. You can multiply the recipe X 2 (for example, for a ½ cup yogurt use 1 cup) to make a big round shaped chocolate cake. 


- 2 or 3 eggs 

- ½ cup  of coconut sugar OR ¾ cup coconut sugar and ¾ of a cup honey or maple syrup

- ¾ cup unsweetened cacao powder

- ½ yogurt

- 1 teaspoon baking soda

- ½ cup filtered water

- 1 OR 1-1/2 cups of all-purpose wheat flour

- ½ teaspoon of baking powder

- ¾ sunflower oil or the oil of your choice (optional)


- Cacao nibs

- ¾ cup of almond milk

- 1 tablespoon of cacao powder

- 1 to 2 pieces of dark chocolate

- 1 teaspoon of honey or maple syrup

- 1 teaspoon of almond or cashew butter (optional)

- ½ cup of blueberries

- 5 strawberries

Prep time: 20 minutes



~ Mix the eggs + coconut sugar first with a mixer

~ Add the cacao

~ Add the yogurt and mix 1 tbsp of baking soda in your yogurt, so it’s like a cappuccino foam and slowly add it to your mix while stirring the mixture

~ Add the water + oil (optional) and mix

~ Add ½ cup of flour first, mix it, then add the baking powder to the other half of the flour and slowly add it to all the other ingredients until your mixture is kind of thick, that’s when you know the flour is enough

~ Pre-heat your oven at 300°

~ Prep your cupcake baking cups and the mixture to each baking cup all the way through or 3/4 of the cup

~ Reduce the temperature to 250° and bake them for 30 minutes, after 20 minutes you can open the oven and see how they look and judge based on that

~ When they are all nicely baked, you can leave them in the oven for a little bit and after 10-15 minutes take them off and let them cool off


How to make the icing:

~ Add the cacao nibs in a saucepan and slowly add the almond milk + cacao on a very low heat

~ Add the chocolate and honey + the nut butter (optional)

~ Put the mixture in the freezer for 10 minutes until its thick

~ Meanwhile cut the strawberries

Finally, take the cream-like chocolate mix from the freezer and start spreading them on your cupcakes and decorate them like the pictures above or get creative. You can always add raspberries and coconut chips too. Yum!!
